Apple Crumble Cupcakes
Ingredients:
1 1/2 cups all-purpose flour
1 1/2 teaspoons baking powder
1/4 teaspoon salt
1/2 cup unsalted butter, softened
3/4 cup granulated sugar
2 large eggs
1 teaspoon vanilla extract
1/2 cup milk
1 cup finely chopped apples (peeled and cored)
Crumble Topping:
1/4 cup all-purpose flour
1/4 cup granulated sugar
2 tablespoons unsalted butter, melted
1/2 teaspoon ground cinnamon
Glaze:
1 cup powdered sugar
1-2 tablespoons milk
1/2 teaspoon vanilla extract
Directions:
Preheat the oven to 350°F (175°C). Line a muffin tin with paper liners.
In a mixing bowl, whisk together the flour, baking powder, cinnamon, and salt.
In a separate bowl, cream together the softened butter and granulated sugar until light and fluffy.
Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
Gradually add the dry ingredients to the butter-sugar mixture, alternating with the milk. Begin and end with the dry ingredients.
Gently fold in the chopped apples.
Fill each muffin cup about 3/4 full with the batter.
In a small bowl, combine the crumble topping ingredients until the mixture resembles coarse crumbs. Sprinkle the crumble topping evenly over the cupcake batter.
Bake for 18-20 minutes or until a toothpick inserted into the center of a cupcake comes out clean.
